Vegan Ceasar Dressing
Servings: 2 servings as a side salad or for 2 kale burritos Preparation time: 15 minutes
Ingredients
- 6-7 Castelvetrano olives, chopped
- 10+ capers, minced
- 1 garlic clove, minced
- 2 teaspoons dijon mustard
- .5 – 1 teaspoon worschester
- 3 tablespoons lemon juice (meyer lemon is the best!)
- 3 tablespoons fruit or red wine vinegar*
- 1.5 tablespoons vegan parm
Instructions
- Combine all the ingredients in a small container.
- Add to chopped kale for a tofu scrambled burrito, or add to romaine/gems for a vegan ceasar salad.
