Veasar Salad Dressing

Vegan Ceasar Dressing

Servings: 2 servings as a side salad or for 2 kale burritos Preparation time: 15 minutes

Ingredients

  • 6-7 Castelvetrano olives, chopped
  • 10+ capers, minced
  • 1 garlic clove, minced
  • 2 teaspoons dijon mustard
  • .5 – 1 teaspoon worschester
  • 3 tablespoons lemon juice (meyer lemon is the best!)
  • 3 tablespoons fruit or red wine vinegar*
  • 1.5 tablespoons vegan parm

Instructions

  1. Combine all the ingredients in a small container.
  2. Add to chopped kale for a tofu scrambled burrito, or add to romaine/gems for a vegan ceasar salad.
