Dandelion greens salad
Servings: Side dinner salad for 2 Preparation time: 15 minutes
Ingredients
Main bowl
- 1/4 shallot minced
- lemon juice
- shaved walnuts
- 1-2 T champagne vinegar
- 1-2 T olive oil (spanish or maybe walnut?)
- splash of rasp vinegar
- salt & pepper to taste
- dandelion greens, cut in 1/2 pieces, and stems cubed
Instructions
- Combine shallots, walnuts, and some lemon juice.
- Add 1/2 of the champagne vinegar and 1/2 olive oil.
- Keep tasting and add more lemon juice, vinegar and oil to get the right combo for however much greens you are serving.
- Salt & pepper if needed.
- Combine dressing w/ greens.
