Cezar Salad

Classic Caesar salad, mexicanified and super tastey!

Servings: 2, Preparation time: 30 minutes

Ingredients

  • 2 large garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 teaspoons dijon mustard
  • 1/2 – 1 teaspoon vegetarian worcestershire
  • 1+ tablespoon raspberry vinegar
  • 3 tablespoons lime juice
  • 2+ tablespoons greek yogurt
  • 1-2 tablespoons olive or walnut oil
  • 1-2 tablespoons nut parm
  • 1/2 cup cilantro, de-stemmed
  • 8 cups romaine or little gems, bite-sized
  • Thinnly sliced red cabbage
  • Tofu cutlets
  • Chips or sliced toasted tortillas, optional
  • Green salsa as an additional topping, optional

Instructions

  1. Place garlic, salt, pepper, mustard, worcestershire in a bowl, mixing together.
  2. Add yogurt, vinegar and lime juice. Mix to combine.
  3. Add cheese and drizzle in oil. Mix until the oil is absorbed.
  4. Add cilantro to the dressing. Mix to combine
  5. Toss the dressing with the lettuce. Optional: top w/ crushed chips or tortilla slices.
