Mom’s banana bread (slightly revised)
Servings: 3 ramekins, Preparation time: 20 minutes
Ingredients
- 2-3 bananas, mashed
- 1 tablespoon ground flaxseed “egg”
- 1 1/2 teaspoon vanilla
- 1 tablespoon melted butter
- 2 1/2 tablespoons maple syrup
- 1 cup flour (Maris Wigeon wheat)
- 1 1/2 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Preheat oven to 350 degrees.
- Mix 1 tablespoon ground flax with 2 tablespoons of water. Let sit for 5 minutes.
- Mix wet ingredients in a bowl.
- Mix dry ingredients in another bowl.
- Add dry ingredients to wet and mix well.
- Butter 3 ramekins.
- Pour batters into ramekins and bake for approximately 25-30 minutes, or until knife comes out clean.
