Banana Pots

Mom’s banana bread (slightly revised)

Servings: 3 ramekins, Preparation time: 20 minutes

Ingredients

  • 2-3 bananas, mashed
  • 1 tablespoon ground flaxseed “egg”
  • 1 1/2 teaspoon vanilla
  • 1 tablespoon melted butter
  • 2 1/2 tablespoons maple syrup
  • 1 cup flour (Maris Wigeon wheat)
  • 1 1/2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix 1 tablespoon ground flax with 2 tablespoons of water. Let sit for 5 minutes.
  3. Mix wet ingredients in a bowl.
  4. Mix dry ingredients in another bowl.
  5. Add dry ingredients to wet and mix well.
  6. Butter 3 ramekins.
  7. Pour batters into ramekins and bake for approximately 25-30 minutes, or until knife comes out clean.
