Dandie Salad

Dandelion greens salad

Servings: Side dinner salad for 2 Preparation time: 15 minutes

Ingredients

Main bowl

  • 1/4 shallot minced
  • lemon juice
  • shaved walnuts
  • 1-2 T champagne vinegar
  • 1-2 T olive oil (spanish or maybe walnut?)
  • splash of rasp vinegar
  • salt & pepper to taste
  • dandelion greens, cut in 1/2 pieces, and stems cubed

Instructions

  1. Combine shallots, walnuts, and some lemon juice.
  2. Add 1/2 of the champagne vinegar and 1/2 olive oil.
  3. Keep tasting and add more lemon juice, vinegar and oil to get the right combo for however much greens you are serving.
  4. Salt & pepper if needed.
  5. Combine dressing w/ greens.
