Slow roasted veggies

Servings: 1 cup, Preparation time: 30 minutes

Ingredients

  • Onions
  • Garlic
  • Root veggies,
  • Herbs and spices of choice
  • 1/2 cup water
  • 1 tablespoon of some oil or butter or soya or your veggie cubes

Instructions

  1. Heavy bottom pot, put in all ingredients (or stage out veggies as needed to not over cook).
  2. Saute 5 minutes or so, cover with lid and let stew, watch water so as not to burn. Add more water as needed.
  3. When all is tender, add few cups of water and green veggies etc., adjust water and seasonings as desired.
